Tony’s takes the ubiquitous tomato and mozzarella salad and spirals it in a new direction. We use golden and red grape peeled tomatoes. This preparation makes it more receptive to our house-made marinade. The cheese–stracciatella—is also marinated in a mixture of lemon juice and zest, red pepper flakes, and fresh basil, transforming it into wonderfully fluffy pillows. Your taste buds will thank you.
Stracciatella is a soft, fresh cheese may be best known as the delicious center of burrata. Stracciatella means “rag,” from the Italian word “strattore” (to stretch), and describes the action to make the cheese as well as the way it looks. It adds an airiness and lightness to our dish.
